Food: Hash Brown Cups

Me + Breakfast = :)

I was browsing Pinterest and saw a recipe for hash brown cups. When I finally made them, however, I just put in whatever I wanted. If you'd like to recreate this yummy delight, keep on reading!

3 egg whites
1 egg yolk
frozen hash browns
cheese of choice (I used Cheddar and Colby Jack)
bacon bits
salt and pepper to taste

1. Preheat the oven to 350 degrees farenheit (I think that's about 180 celsius)
2. Fill each cup 3/4 full with hash browns. If hash browns were previously thawed, press them down so you can fit more in the pan. They will shrink when they cook.
3. Distribute the egg mixture over the hash browns.
4. Sprinkle as much or as little cheese as you desire.
5. Sprinkle bacon bits to finish.
6. Bake for 25 minutes or until completely brown.
7. Serve with your favorite condiment or eat by itself!

I hope you enjoyed this post! This is a great way to use your eggs if they're about to expire. You're welcome to use full eggs (whites and yolks) if you'd like. I just wanted to try and be a little healthy, that's why I only used one yolk.
