Food: Caprese

I have been really loving tomatoes for the past few months ever since I tried a Caprese Sandwich from the Earl of Sandwich at Harrah's Casino. I try to be healthy when I go out to eat -- it doesn't always happen -- so when I saw it on the menu and read that the ingredients weren't repulsive to me -- I don't like vegetables -- I went ahead and tried it. Wow, best decision ever. It was so delicious and such an explosion in my palette. I also got the sandwich on wheat bread. I don't particularly like wheat bread, but the one I had was amazing!

I didn't go to Olive Garden for years and years, but this year, I've been there twice so far. I've ordered the Bruschetta Caprese appetizer when I visited. It was amazing, though the two times I've been there, I had two different experiences. The first time, my order was liquid-y -- probably because of the tomatoes -- and the second time, it looked like the photo above. I enjoyed both, but to be honest, I enjoyed the second one better because I was able to take such a gorgeous photo :D

Feeling inspired, I've tried to incorporate more tomatoes in my snacks. I found that I prefer grape tomatoes from Roma tomatoes. I chop them up, season with salt and pepper, and a little bit of extra virgin olive oil. It's delicious with crackers! I prefer the Triscuit crackers if you were wondering. Next up in my adventure is to try to actually buy a balsamic vinegar. Eventually, I'd love to create my very own Caprese :)
